Braised boneless veal shank

What you need:

75 pieces of boneless veal shank
2 cups vegetable oil for sauteeing
salt and pepper, to taste
2 cups carrots, diced brunoise
2 cups onion, diced brunoise
2 cups celery, diced brunoise
2 Tablespoons
6 liters demi glace
3 lite s red wine
water, as required

 

1 Saute veal in braising pot.  Saute a few at a time until all the shank is seared.

2. Return the shank to braising pot and add demi glace and wine.  Cook until meat is tender( about 1.5 hours, adding water as required.

3. 1/2 hour before serving, add the brunoise vegetables, garlic and correct the seasoning with salt and pepper  to taste.
